Commonly used for braising and roasting, the Wagyu topside roast is made up of a large lean joint of meat that is cut from the hindquarter of the animal, between the leg and the rump.

As one of the leaner Wagyu joints, the topside roast is left covered with a generous layer of fat over the top of the joint that naturally bastes the meat whilst cooking, creating a tender and succulent roast. Best cooked medium rare for a succulent, tasty Wagyu eating experience.
